The other day I was in the mood for a grilled cheese sandwich, but also had some peppers I cooked the night before, which had to be eaten or they would go bad.
So, in came this idea, to put the peppers in between the bread with the cheese and grill the whole thing. So I just placed all the peppers (which were a mix of red and green ones with some onions as well) on top of two slices of Cheddar cheese and topped it off with the bread.
Of course, you can use any bread you like, I personally try to use whole wheat, although sometimes I also use sourdough and rye as they delicious too.
Anyway, I use the small countertop oven and put the sandwich in on the grill or broil setting for about 4 or 5 minutes, turning the sandwich around midway through. And that’s it! You can serve it with some chips, fries, salad, or whatever you like, and it makes for a delicious lunch!
And since the peppers are well melted in with the cheese, most kids will enjoy eating them, hardly noticing that there are vegetables in their sandwich. Great way to get them to eat a healthy meal.
